Menu planning update
Last week I went back to my old habits and did not follow my menu at all. The only thing I did as planned is the crock pot meal on my garage sale day. There were multiple reasons for my failure, but probably the most significant was that I didn't put a lot of thought into my plan. For instance, I thought I had shashlik in my chest freezer cut and in it's marinade ready to be cooked. When I went to pull it out to thaw the night before, I only had pork loin in a large piece for a roast and cut in steaks for mushroom pork loin. At that point it was too late to thaw, cut up, and marinate the pork loin for dinner the next day.
My week was extra busy with subbing and a garage sale. Our sale went very well. We all sold the main things we wanted to sell and we had fun as friends. I had younger friends with little kids joining my sale. It was fun for me to have little kids running around and the opportunity to snuggle with a one year old.
I tried to put more thought into my menu plan this week. Menu planning has been a huge help when I take the time to plan carefully and follow my plan by thawing the meat the night before.
Kitchen Goals
I just made Brigette's better-for-you banana bread for my Sunday school class tomorrow morning. It looks and smells wonderful! I love how she suggested sprinkling the top with chocolate chips and nuts. It's such a simple way to make the bread look extra special. I hope to get some more bananas this week so I can bake more banana bread for home and lunch treats.
Over the next several weeks I would like to experiment more with coconut oil. This week I plan to replace the canola oil with coconut oil in my granola recipe. I also hope to make more easy whole wheat bread. Since I don't grind my own flour, like Brigette, I am going to add some dough enhancers like she suggests for those of us who don't grind our own flour. I also want to look for recipes and ideas for using coconut oil. Any suggestions?
