Menu Plan for the Week of April 22

This coming week is David's birthday (11!). We always have a small celebration on the actual day of the family member's birthday and then a "Birthday Celebration Day" on the Saturday of the same week. We do this so the birthday boy or girl gets a full day to celebrate his or her special day. For this reason, David gets to pick the meal for both Tuesday and Saturday this week. Store bought shell macaroni and cheese is on the menu, but a sign of him growing up is that he requested steak for the first time this year. I remember requesting frozen pot pies for my birthday when I was young! At least he requested "grown-up" chicken nuggets to go with the mac and cheese. In addition to these requests, I tried to make some of his favorites this week.
Mom's Spaghetti
Normally David requests corn on the cob, but there isn't usually corn on the cob available in April, so he settles for corn. This past week our Kroger had corn on the cob and it was delicious. You would never have guessed this corn was so early. It tasted as good as peek season corn. It was too early to buy it and save it for David's birthday, but he is holding out hope that it will still be available for his birthday dinner.

Grown-up Chicken Nuggets
Another exciting event of the week is that we have dinner plans with a friend on Friday. A dear widower from our church invited us over for dinner. He wouldn't even let me bring anything! He is a very special man to our family and we are excited to share dinner and fellowship time with him.

  1. Funny, Danelle requested box mac-n-cheese for her birthday today--with sliced hot dogs mixed in. and "no salad please".
